There are restaurants that cook with skill. And then there are restaurants that cook with conviction. Temper in Covent Garden belongs firmly in the latter camp.
From the moment the plates began to land, there was no mistaking the intent. This was food designed to satisfy on a primal level, full of flavour, unapologetic and confident in its craft. The kind of cooking that understands meat not simply as an ingredient, but as the centre of the experience.

The aged beef nachos arrived generous and indulgent. Mature cheddar melted into every layer, pickled onions sliced cleanly through the richness, and tajin delivered a bright citrus heat that kept the palate alert. It would have been easy for a dish like this to feel excessive, yet it remained controlled. The quality of the beef was immediately clear. Deep, savoury, unmistakably aged.
Then came the brisket carnitas. This was the moment the kitchen truly spoke. The brisket was tender to the point of surrender while still holding structure. Mixed herbs lifted the depth of the meat and the tajin once again provided that sharp spark that keeps each bite dynamic. The quality of the meat stood out. High grade, confidently handled, and cooked with precision.
The truffle chips, finished with parmesan and truffle oil, were more than an accompaniment. Crisp and fragrant, indulgent yet balanced, they added texture and a sense of quiet luxury that felt entirely at home within the meal.
Dessert followed with assurance. The chocolate mousse was rich yet aerated enough to remain elegant. Honeycomb introduced crunch and caramel sweetness, while the maraschino cherry added a nostalgic finish that completed the plate with charm.

The Le’mon Cheri brought the evening to a composed close. Buffalo bourbon, lemon curd, lime and cherry created a drink that balanced warmth with citrus sharpness and depth. It felt considered and deliberate, not decorative.
Temper is a great venue. The energy of the room, the open fire, the hum of conversation and the visible craft all contribute to something memorable. Yet what lingers most is the flavour. Full, confident and driven by quality ingredients.
This was not subtle dining. It was satisfying dining. And sometimes that is exactly what the evening calls for.
