London’s fast casual food scene has never been short on innovation, but every so often a collaboration arrives that feels genuinely considered. This winter, flavour first favourite atis joins forces with produce led pioneers Holy Carrot for a limited edition bowl that brings fermentation, balance, and restaurant level craft into everyday dining.

Launching from 2 February, the atis x Holy Carrot bowl is a celebration of depth, umami, and nutritional intelligence. It is not just another seasonal special. It is a meeting point between fine dining technique and accessible, feel good food.

Where Fine Dining Meets Everyday Eating

Holy Carrot is known for its meticulous approach to vegetables, fermentation, and flavour layering. atis, meanwhile, has built its reputation on approachable bowls that never compromise on taste. Together, the two brands have created something that feels both elevated and effortless.

At the heart of the collaboration is a bowl designed around three new elements inspired by Holy Carrot’s kitchen philosophy:

• Sweet pickled carrots

• Crunchy roasted seaweed

• A signature mushroom XO sauce

These components sit on a generous base of kale, spinach, and wholegrain rice, layered with cucumber, peas, edamame, umami rich mushrooms, and fresh herbs. Everything is brought together with a Miso Ponzu dressing and Holy Carrot’s house made XO spice blend.

The result is a dish that feels complex, comforting, and quietly ambitious.

Flavour With Purpose

Beyond taste, the bowl is built with wellbeing in mind. Packed with fermented and pickled ingredients, it supports gut friendly digestion while delivering bold, savoury satisfaction.

It is proof that healthy food does not need to be restrained or predictable. Instead, it can be layered, expressive, and deeply satisfying.

Katharine Randell, Head of Food Innovation at atis, explains: “Our aim was to create a bowl that genuinely showcased the strengths of both kitchens. Drawing on Holy Carrot’s expertise in pickling, fermentation and seasonal produce, we wanted to deliver deep layers of umami that feel exciting, nourishing, and creative.”

A Collaboration Rooted in Craft

The bowl was developed by Katharine Randell alongside Daniel Watkins, former Executive Chef at Holy Carrot. Together, they translated restaurant level fermentation and seasoning techniques into a format that works seamlessly across atis locations.

Watkins adds: “Fermentation sits at the heart of how we build flavour at Holy Carrot. This collaboration allowed us to bring that philosophy into a more everyday setting, while staying true to our produce led approach.”

It is this shared respect for ingredients and process that makes the partnership feel authentic rather than promotional.

Both brands share a commitment to sustainable sourcing and seasonal produce. The collaboration reflects a wider shift in London dining towards food that is thoughtful, low waste, and rooted in responsible practices.

Rather than chasing trends, the atis x Holy Carrot bowl focuses on fundamentals: flavour, texture, balance, and integrity.

The atis x Holy Carrot bowl is more than a seasonal menu addition. It is a statement about where casual dining is heading. Thoughtful. Technique driven. Nutritionally smart. And unapologetically flavour led.

In a city crowded with “healthy” options, this collaboration stands out for its depth, discipline, and genuine creativity. It proves that the future of fast casual food is not about cutting corners. It is about bringing restaurant quality thinking into everyday moments, one perfectly balanced bowl at a time.
