Sapling Spirits Supper Club at The Pelican, Notting Hill

A zero-waste dinner in celebration of earth month


In celebration of Earth Month, climate-positive spirits brand, Sapling Spirits has joined forces with The Pelican in Notting Hill to host a zero-waste supper club on Tuesday 18th April. Londoners will be in with the chance to enjoy a four-course feast paired with a selection of Sapling cocktails to perfectly complement each course. Tickets will be available to purchase via Resy for £90.00 per head.



To raise awareness of Earth Month and the sustainable choices one can make whilst enjoying good food and drink, the supper club will showcase the very best zero-waste dining experience using ingredients from local producers which use sustainable production methods.


Chef Owen Kenworthy’s four-course menu will be centred around the cow, sourced from Whittington Lodge Farm. The Cotswolds based farm aims to leave the land their cattle is raised on in a better state than they found it, achieved through techniques such as ‘mob grazing’ where the herd is moved to new pastures daily. Farm owners Ian & Cathy Boyd provide The Pelican with a whole cow, ensuring no part of the animal goes to waste. Carbon emissions are also reduced from fewer deliveries between farm and pub.


The flour used throughout the kitchen, in The Pelican’s housemade sourdough, in pastries and desserts is sourced from Wildfarmed, who commit to promoting soil health by eliminating the use of herbicides and pesticides in all of their products. Wildfarmed work with over 40 growers who use sustainable farming techniques and focus on regenerative agriculture.

Since opening, Owen has vowed never to allow single-use plastics on site, so things like cling film are completely off the cards. Sticking to these policies, teamed with working carefully selected suppliers, means hosting a zero waste dinner is something which is very achievable.


Sapling will be co-hosting the supper club, to educate guests on its British-made spirits. The brand was first founded in 2018 as the world’s first climate-positive British-made spirits brand using local ingredients to reduce transport emissions. It is four times distilled from 100% British wheat and blended with charcoal filtered, deionized water. They produce both Vodka and a London Dry Gin range and for every bottle sold a tree is planted.



The four-course menu will be accompanied by Sapling zero waste cocktails.

The Pelican x Sapling Spirits Zero Waste Menu will include:

Canapés

  • Beef shin & mustard terrine

  • Cod's Head on Rye bread

Starters

  • Wonky carrots, soured cream, nettle

  • Fermented Cauliflower leaves & Devilled Eggs

  • Braised Ox Tongue, wilted greens

Mains

  • Fifth Quarter Hot Pot

  • Lettuce with a mustard dressing

Dessert

  • Soused Blackberry, Rhubarb & Almond Cake
